An important thing to remember about young children is that their tastes and preferences change literally from day to day. So while your son may be going through a period of not eating veggies, don't give up on him. Keep serving vegetables several times a day and letting him decide whether or not to eat them.
An 8-month-old can eat any well-cooked, soft, mashed vegetable. Some delicious veggies at this time of year are broccoli, sweet potatoes, butternut squash and cauliflower. Steam pieces of vegetables until soft, then puree them or mash them well with a fork. You can cook vegetables in broth for a little added flavor.
As your son gets older and can feed himself small bits of food, vegetable soups are perfect. Make sure the vegetables are in very small pieces and soft, then drain most of the liquid off, so that his soup is more like a stew. You can add pieces of pasta and pieces of kidney beans or black beans too.
