Introduction

December 26, 2001

Well, Christmas was really fun this year. What a difference having two kids makes! Double the fun! Double the trouble! Double the *everything*! Rachel’s favorite was her Boo doll from Santa. Mitchell was interested in all the excitement, too. He got lots of toys and clothes. Jerry got another saw (yikes!) and a watch. Jerry and the kids gave me a sapphire ring with diamonds on the side. It’s exactly what I would have picked!

I made a turkey which was (thanks to Emeril) the best ever! I’m not much of a cook. I can and do love to bake, but “cooking” is not something I care to do. I was determined to make something really good for our first Christmas with both kids. Emeril prepared a turkey on the Today show which, to me, looked s-o-o-o-o good! When the host tasted it, the look on his face said it all. It was s-o-o-o-o moist! I just wanted to try it. So, I did. Normally, any recipe that calls for more than 8 ingredients is too much trouble (to me)! There were lots of ingredients (mostly just a lot of spices), but it was really easy! The turkey was cleaned and it was “brined” or soaked in a huge tub in the fridge for 48 hours. The marinade was made from lots of spices (cinnamon, whole oranges, cloves, wine, onion, Emeril’s seasonings, etc.) and then I put it inside a large garbage bag and then inside a double turkey pan. It was so easy I think it will be our family tradition. Jerry loved it too!

I finally got to see the Harry Potter movie. I really enjoyed it. I had wanted to see it, but not before finishing the first book. I am now finished with the second book, too! It was interesting to see Hogwarts, and the various characters, along with how the story line falls into place.
